Student Chefs Prepare Fall Luncheon at Tilly Foster

Where better to enjoy the crisp flavors of fall than at the student-run Educated Palate North restaurant, located at the Tilly Foster Farm Educational Institute? Culinary students of Putnam | Northern Westchester BOCES put their passion into practice by preparing a three-course fall-themed luncheon for local patrons at the Putnam County facility.
The rustic wood-paneled restaurant was the perfect spot for diners to enjoy an appetizer platter of pickled red cabbage, watermelon radishes, roasted garbanzo beans and grilled eggplant served on a bed of sautéed Swiss chard and Italian kale, drizzled with avocado oil. Next they were treated to butternut squash apple soup, topped with roasted pumpkin seeds. The main course was roast beef with a mushroom au jus accompanied with Yuka mash and a cauliflower medley. For dessert: apple crisp topped with homemade vanilla ice cream.
Hospitality students at Tilly Foster learn cooking and baking/pastry arts, food safety, sanitation, and nutrition in addition to the business aspect of running a restaurant. They get hands-on experience via the Educated Palate North restaurant and by catering special events.
With its stone fireplace and wood paneling, Tilly Foster is the perfect spot for a student-run fall luncheon.
